
Drum roll please….. it’s time for a recipe post!!!! I know, it’s been a while. As the saying goes better late than never though. If you are new to Meatless Monday this is where I share all things vegan related. Whether that’s stuff about nutrition, a recipe, product or restaurant reviews. I will say that using an electric pressure cooker really helps speed things along! We have the Maximatic 8 quart pressure cooker and potatoes cook in just 9 minutes! I love this thing! Honestly I’ve NEVER boiled potatoes since I got this 18 months ago. Just add about 4lbs of potatoes cubed to around 2″ then approx 1 cup of water and cook for 9 minutes. BOOM, done!
I’ve used the pressure cooker for soups, beans, and chili but it has so much potential. I totally recommend this one! Once the potatoes are cooked I use what I need and then cool the rest and store in the fridge till needed, either to use cold for salads or reheat. In this recipe I used what I needed in a potato ricer. This is a great way to mash potatoes without using added oils. I did a review of the potato ricer already, but seriously I use this ALL THE TIME too. Great for low fat cooking. With this your mashed potato needs nothing extra. You get fluffy mash rice like potato mash perfect for adding to recipes like this one. Thumbs up!
Once cooked the cottage pie looks awesome! But it’s freakin’ HOT so watch your mouth. I just ate mine with a half plateful of veggies. Which EVERYONE should be having. Half your plate needs to be veggies people! I know, I know technically ALL my plate is veggies but you get what I’m saying. I was delicious. The seasonings I used were just stuff I had on hand. A little cumin, coriander, spike, & black pepper. No need to get too fancy, just use what you have!
