
It’s Meatless Monday, so I hope you have plans for meatfree meals today. If not, no fear I’m here to save the day. Like a plant based superhero. Cast your mind back to July when I mentioned I had the Spicy Indian Veggie Burger from Morning Star farms in not one but TWO of the free meals we scored at Blogfest. Well since then I’ve been playing with the Morning Star Farms spicy indian burgers and made my own version I’m calling Spicy Indian Style Quinoa
Spicy Indian Style Quinoa
If you haven’t guessed this dish contains the Morning Star Farm Spicy Indian Style Burger. These are vegan burgers with a nice spicy kick. Full nutritional info on these can be found on the Morning Star Farms website. The burgers are great as they are but really IMO just don’t taste right on a bun like a ‘normal burger’.. they something fancier.
Ingredients & Instructions
Morning Star Farms Spicy Indian Style Burger – finely chopped
1cup quinoa – cooked
1 zucchini
1/2c corn
1/2c toms
1/4c red pepper
1/8 c spring onion
1/4 c mushroom
water
Now the cooking instructions are pretty indepth and super complicated, so pay attention…
just throw all the chopped veggies into a pan with the burger bits, cook for about 8-10 minutes occasionally stirring. Then add the quinoa… Cook till quinoa is warmed through and… Voila!

What? You were expecting something complicated? Ain’t nobody got time for that! This is great on it’s own, as an appetiser, or stuffed into peppers, on mushrooms, in wrap or as a side for your main dish.
