Meatless Monday: Veggie Salad dressing

MEATLESS MONDAY veggie salad dip dressing
Creamy salad dressings are something I kinda miss since going vegan, and especially since switching to clean eating and avoiding all the preservatives and junk they put in bottled dressings. So I went on a search for dressings and tried a few. Whilst I didn’t like little bits of one or another I came up with my own version that’s creamy but cheesy (thanks to nooch). The important thing is to try stuff, add things in for different combinations and variety. Pretty much no two dressings I make are the same, I might change the amounts or use slightly different veggies depending on what I have in stock. Sometimes I substitute vinaigrette for lemon juice too. Play with it 🙂

If we’re doing well on one thing it’s eating in. Both of us eat in WAY more than we used to. Really, we only ate out Saturday dinner (because I’d run out of salad stuff) and Sunday night (date night). In all this is helping our food budget, our waistlines and our finances overall. One big step on making this solidify though is getting back to menu planning. I slipped out of the habit and need to get back on track. Especially now as I have a busy two weeks ahead!

 

gardening project 2015 april
This is the start of my gardening project for 2015. I’m growing tomatoes, cucumber, green beans, chard, radish, green onions, beets, collard greens, mustard, and peppers.
