Peanut butter salad dressing over vegetable spirals

 

So recently I got a vegetable spiralizer. Honestly I’ve been getting a lot of new toys lately and not having enough time to play with them let alone write a blog post or review BUT the spiralizer review will be coming tomorrow! Honestly these new things push me outside my box. I love veggies and having new ways to prepare them excites me 🙂 Today though for Meatless Monday I wanted to share this recipe for a thai style peanut sauce salad dressing. Peanut butter salad dressing recipe

1 Tablespoon of peanut butter
1 Tablespoon of maple syrup
Ground Cayenne (to taste)
Ground Paprika (to taste)
Water

In a small dish, using a fork mix the peanut butter, maple syrup and spices. Add water to thin to your desired consistency. BAM done!

Spiralize some veggies and toss to mix them up a little.
Drizzle the dressing over the spiralized veggies and sprinkle sesame seeds on top.

Honestly I love NUTS. You could say I’m nuts about nuts. I know many people don’t eat them because of the high fat content but it’s GOOD fat people. We need good fats for healthy brain function. That doesn’t mean you can go eat a 1lb a day but in moderation nuts are fine. I loved this thai style veggie noodle dish and will be bringing you more recipes using the vegetable spiralizer soon!
