Gardein Sweet & Tangy Pita Pocket

Since our trip to San Francisco I’ve been a little obsessed with pita’s. The Flying Falafel in San Francisco really reminded me how awesome a pita can be for a quick tasty lunch. Pita’s are like having a sandwich, but everything is contained. Meaning it’s way less messy! I’ve been throwing all manner of things into a pita lately, and seeing what tasty combinations I can come up with. So when Mambo Sprouts asked if I wanted to do some *Gardein Grill Recipes I jumped at the chance because we freaking LOVE Gardein! This is a recipe for Gardein Sweet and Tangy Pita Pocket using their Barbecue wings. *I was compensated in free Gardein product, however all opinions are my own. I’m just excited because we use Gardein all the freaking time!

Gardein Sweet and Tangy Pita PocketIf you live in the USA you’ll know that Memorial Day is coming up. That means it’s time to shake the cobwebs off the patio furniture and grab the charcoal because it’s BBQ season! Gardein has plenty of plant based burgers to choose from, but sometimes it’s just too hot for burgers. I want something light and airy. Which lately seems to be pitas.

Gardein Sweet and Tangy Pita Pocket

The secret ingredient for this Gardein Sweet and Tangy Pita Pocket are MANGOES. These are on sale everywhere here right now, so it seemed apt to use them. My tip for mangoes is to cut them in half, then etch criss cross lines in the flesh. Simply flip the half inside out. Then you can slice off the flesh into precut chunks, without making so much mess! Easy peasy.

Gardein Barbecue Wings

For this recipe you’ll need Gardein Barbecue Wings. Thankfully Gardein is available in lots of place including mainstream stores like Target, Ralphs, and Sprouts. A serving (4 wings) without sauce has just 110 calories and a whopping 14g of Protein. Perfect if you’re counting calories for that Summer bikini. I’m looking at you Hawaii trip!

Our BBQ has a side stove burner, grill, warming rack, and all the bells and whistles. However, the weather was not cooperating so I had to cook indoors. Bummer. The process is the same though. Cook the wings as per the package instructions. That should take under 10 mins! Enough time for you to chop the salad veggies. I used lettuce, cucumber, carrot, cherry tomatoes, and fresh mango.

Fill your pockets!

Once your wings are cooked, add the BBQ sauce to marinade for the last 30s. Slice the pitas in half and throw them on the warming rack (or toaster oven if you’re cooking indoors). At this point if you’re lazy you could toss the wings on top of the salad and call it done. Or you can go the extra mile and make it less messy and more picnic/BBQ friendly and fill those Garden sweet and tangy pita pockets!

I’m definitely in the ‘bitesize’ wing camp so I cut my wings into 3-4 smaller pieces. This makes every bite a little tangier. So mix and throw your filling into the pocket. If you want things a little spicier might I suggest Just Sriracha mayo or Just Chipotle Mayo. Sprinkle some sesame seeds on the top and voila!

These Gardein Sweet and Tangy Pita Pockets are a perfect lunch, or snack. One of the great things about this recipe is how quick and easy it is. It could even be prepared ahead of time if you cut and chop the salad, and cook the wings and wrap them in foil and throw them on the warming rack. I’m all about quick and easy.

Seriously how tasty does this look? I love these pita pockets for a few reasons. Not only do they make less mess, but the calories are less than say, a burger bun! Plus they aren’t as heavy on your stomach making them perfect for pool parties.

    Pitas are great aren’t they? We usually stuff grilled chicken in there and I love that you used mangoes. We sometimes put pineapples too.
