Delicious Daiya Berry Parfait Recipe

We all have our daily routines, that can get, well… boring. It’s easy to get stuck in a rut when preparing meals or snacks. This is close to my heart as I’m currently on a clean eating kick, as I’m doing the 12 week transformation challenge with Gold’s Gym. This stemmed from my 3 month hiatus away from lifting, and 3 months of indulging during Hawaii, Holidays and Florida. Excuses, excuses! Anyone, one thing that’s apparent from my food tracking on MyFitnessPal is that I was overeating and under exercising. Not only that, but I also found myself filling up on the wrong foods, putting my macro’s all out of whack. I’m now getting back on track I’m adjusting my meals and snacks. Recently one afternoon snack I’ve been enjoying s is Daiya Greek Yogurt. It makes and absolutely delicious berry parfait!

Daiya Greek yogurt

In 2013 I switched from a 20 year vegetarian diet to a 100% vegan diet. I had tried to make the switch before, but a couple of things always tempted me back. Namely cheese and greek yogurt. I will tell you for certain, that had Daiya been around back when I first tried I would have gone vegan much sooner. Pretty much any meat based product you can think of now has a vegan alternative. Including, thanks to Daiya, one of my old favorites… greek yogurts. Greek yogurt had always been my favorite type of yogurt. It was creamy, yet slightly tart. It had a thick consistency too, meaning you could use it for so many things! Let me just say that when Sprouts opened a store in our city last year I was over the moon. They stock a lot of Daiya products including my beloved greek yogurt.

Reasons to choose Daiya

Whether you are vegan, lactose intolerant, have food allergies or just want to switch to a healthier lifestyle Daiya is a great brand to seek out. For those with allergies be assured that Daiya products are free of dairy, gluten, soy, eggs, peanuts, fish and shellfish. For us vegans all Daiya products are free of animal products and certified vegan. All Daiya products have ingredients you can pronounce, with no hormones, no antibiotics and nothing artificial. Better for your health, better for the environment and better for the food system.

Each container of Daiya Greek yogurt contains just 150 calories making it a great way to enjoy an afternoon treat without racking up the calorie intake or destroying your appetite later. I’ve found it’s “just enough”. With 4.5g fat, 20g carbs and 8g protein it’s something that works right into my daily macros too. For those counting macros:

  • Protein  21%
  • Fat          27%
  • Carb       53%

Daiya Berry Parfait

Serves 1

Ingredients:

  • 1 tub Daiya Greek Yogurt
  • 3oz berries*
  • 1/4 cup granola*

*save a small amount for decoration

Directions:

Place 1/2 of the berries into bottom of jar, add 1/2 of the granola. Add 1/2 the tub of Greek Yogurt. Repeat the
layer of berries, granola and yogurt. Top your parfait with a sprinkle of granola, and any remaining berries. Serve and enjoy!

As you can see I chose the blueberry Daiya greek yogurt and blackberries for  my parfait. Why? Blackberries were on sale at Sprouts. Gotta take advantage of those sales. I absolutely LOVE this with strawberries fresh from the farm and the strawberry greek yogurt but alas I haven’t been on a farm trip lately. I hear the strawberries are coming into season though so definitely making a trip soon!

Now although I may lick the lid of the lid of the yogurt to get every last bit of flavor, I can’t get my tongue into the pot. Thankfully I have a buddy that has a longer tongue and enjoys the Daiya greek yogurt as much as I do! Seriously Pixel loves this stuff and giving him the pot to lick clean is a little treat that keeps him quiet for about, oh… a minute. I guess all our family loves Daiya!

    Oh, I always lick the yoghurt from the lid! It would be a shame to waste it, wouldn’t it? Seriously though: this recipe looks delicious and I can’t wait to try it.

    I love blueberry yoghurts – they are my favourite. Used to make a parfait like this when I was working in an office – it’s the perfect healthy breakfast! xx

    I love yogurt and I definitely lick the yogurt off the lid. The Daiya yogurt looks really flavorful and creamy and must be delicious when you add fruit to it.

    I haven’t heard of this yoghurt but it looks so yummy! Berries, yoghurt and granola is one of my favourite meals. Also, I hate it when people like the yoghurt off of the lid haha – I don’t know why!

      I think a lot of it is in the prep. Trust me I’ve had the same ingredients thrown together in a bowl and they don’t taste the same. We eat our food with the eyes too 😉

      Try it with any yogurt. I just used Daiya to show that the vegan option is available.

    Yes, I lick the yogurt off the yogurt lid, and my dogs are all about licking the container clean whether or not they are supposed to. 😉 Greek yogurt is my favorite. That parfait looks so good.
