meatless monday dominex eggplant cutlet

Meatless Monday: Dominex Eggplant Cutlets

April 27, 2015 //  by Di Hickman

As an official Meatless Monday blogger sometimes we get perks, one is that we sometimes get to try meatless products, test them, review them, try them out, and generally see what we think. Recently I got to try out two Dominex products. As I'm all about the blogging I figured I'd spill the results into a few different posts and share little by little, and honestly because I'm a photo taking and food eating fiend ;)  Dominex are known as the "eggplant people" and you might think "really? …

how to use a vegetable spiralizer

Review: Very Healthy Spiral Slicer by Varietyland

April 21, 2015 //  by Di Hickman

I mentioned yesterday that I'd been using a vegetable spiralizer recently and as I've used it a couple of times now I figured I'd do a review. I was invited to do a review on the Very Healthy Spiral Slicer by Varietyland in exchange for an honest review, so I cleaned up the kitchen a little and set about the task. In the box you get the spiralizer tool, a small bottle brush and a pushing attachment. I did a video review which you can view below or on my YouTube channel: So …

Peanut butter salad dressing over vegetable spirals

Meatless Monday: Peanut butter salad dressing recipe

April 20, 2015 //  by Di Hickman

So recently I got a vegetable spiralizer. Honestly I've been getting a lot of new toys lately and not having enough time to play with them let alone write a blog post or review BUT the spiralizer review will be coming tomorrow! Honestly these new things push me outside my box. I love veggies and having new ways to prepare them excites me :) Today though for Meatless Monday I wanted to share this recipe for a thai style peanut sauce salad dressing. Remember to check out last weeks …

MEATLESS MONDAY veggie salad dip dressing

Meatless Monday: Veggie Salad dressing

April 13, 2015 //  by Di Hickman

Creamy salad dressings are something I kinda miss since going vegan, and especially since switching to clean eating and avoiding all the preservatives and junk they put in bottled dressings. So I went on a search for dressings and tried a few. Whilst I didn't like little bits of one or another I came up with my own version that's creamy but cheesy (thanks to nooch). The important thing is to try stuff, add things in for different combinations and variety. Pretty much no two dressings I make are …

meatless monday vegan pear krumble recipe

Meatless Monday: Fruit Krumble Recipe

April 6, 2015 //  by Di Hickman

Another Monday rolls around, and as it's Meatless Monday I want to share this recipe for a warm fruit Krumble. In England we have a dessert called apple crumble which has stewed apples and a topping of a crumbled cooked mixture of flour, margarine sugar. Not the healthiest of things to combine with fruit eh? Delicious though. So I decided to come up with something that would work instead of the fat laden, processed original and make it healthier and whole foods based. Enter dates, coconut and …

meatless monday vegan greek falafel salad

Meatless Monday: Vegan Greek Falafel Salad

March 16, 2015 //  by Di Hickman

I'm all about quick and easy meals that take under 30 minutes to prepare and cook and they don't come much quicker than this Falafel Salad because I use the Fully Cooked Frozen Falafal from Trader Joes. These are in the frozen aisle at Trader Joes and just delicious. They aren't an everyday food for me as they have 490 mg sodium per serving but until I get to a point where I can prepare my own (my next step, experimental recipes ahead!) then these are a good substitute. [yumprint-recipe …

MEATLESS MONDAY TOSTADA SALAD

Meatless Monday: Vegan Tostada Salad

March 9, 2015 //  by Di Hickman

I have a few favorites at Natural Cafe, the Yogi Special, Black Bean enchilladas or Buddha Burrito and pretty much anything can be made vegan by asking for no cheese or sour cream. I've liked the Natural Salad for a while but wished there was more substance to it, like rice and beans and then Bob introduced me to the Tostada Salad. Tostada Salad $9.49 Baked whole wheat tortilla topped with black beans, rice, mixed greens, carrots, jicama, salsa, sour cream, guacamole. I ask for no …

vegan easy microwave jam sponge pudding

Meatless Monday: Vegan Jam sponge pudding recipe

February 9, 2015 //  by Di Hickman

After Januarys success of getting back on track with menu planning I decided the goal for February would be COOKING more. So I planned some homemade meals, including some deserts! As deserts tend to be a last minute thing in our house one staple we fall back on is an easy microwave sponge pudding my mum used to make when we got our first microwave. As I've veganized it I figured I'd share the recipe, and just in time for Valentines Day! You're welcome. Remember this is a treat, not an everyday …

trader joes sweet potato fries

Meatless Monday: Trader Joes sweet potato fries review

November 17, 2014 //  by Di Hickman

If you love fries and you like sweet potatoes then combine the two with these Sweet Potato fries from Trader Joes. I really prefer to make my own from real sweet potatoes to bake in the oven but sometimes life and time dictate that opening a bag and throwing food into an oven is quicker. So I always have a bag of these on hand.  Note the servings size, which means 5 servings per bag. I'll tell you that's bullshit. A serving of fries is TEENY TINY. Nobody eats that few fries, least of all …
