Blueberry Protein Pudding recipe, vegan protein packed dessert

For the last 12 weeks I’ve been on the Gold’s Gym 12 week transformation challenge. During that time I’ve lost 10lbs. While not a lot “the biggest loser”, it’s what is the trickiest to lose: that “last 10lbs”.  That’s always the hardest because it’s the one you really have to dial in. And yes, I did it all on a plant based diet eating copious amounts of carbohydrates. More importantly I didn’t deprive myself of treats and desserts. I’ll post more on the challenge after it’s finished (tomorrow!), but for today I wanted to share one of the desserts I’ve been having while cutting the last 10lbs. It’s what I call blueberry protein pudding.

One thing with desserts is that though they taste great they don’t often fit into macros when working towards weight loss. Many are packed with fat which means a lot of extra calories. Or they are 100 calorie “lite” versions which just don’t leave you satiated so 20 minutes later you’re still hungry. With simple homemade desserts like this protein pudding you can fix something quick and sweet, and know that you’re diet is going to stay on track.

BlueBerry Protein Pudding

So this recipe is super quick, just how I like them. Plus it literally has 4 ingredients making it super easy. All you need is a blender/food processor. I recommend a Vitamix because honestly before I had that thing I had no idea how much my blender was struggling. Of all the kitchen appliances I have I place my Vitamix above a microwave, it’s that good! So for the recipe you need:

  • 3oz Soft Tofu
  • 1 cup frozen blueberries
  • 1/2 scoop PlantFusion Vanilla Protein Powder
  • Splash of almond milk

To make the pudding you just throw everything into the Vitamix and blend. I suggest pulsing as the berries can get stuck. Blend to your desired consistency. If you’d like something more like soft serve ice cream then just and a tiny amount of almond milk. If you’d like something more with a yogurt or vanilla pudding consistency add maybe 1/4-1/2 cup of nut milk. I added  a sprinkle of hemp hearts on top because it looks cool and recipe posts are all about the food porn photography right? As a side note would you be interested in a food photography post? Nutrition Breakdown

If like me you’ve been on a weight loss journey then you might want to know the nutritional breakdown. One of my pet peeves is seeing a ton of these recipe posts and having no nutritional information on them. Seriously. Last week I saw a recipe video clip that had butter, cream cheese, cream, more butter and sugar. I don’t remember what dessert the recipe was for because I was so shocked at the fat and calorie content. I’m not saying we should all count calories, but don’t be surprised when your butt tries to escape your jeans. Trust me I’m speaking from personal experience here when I say that calories IN vs calories OUT matters! More on that when I recap the 12 week challenge, I’m getting off track as usual, back to the breakdown…

Carbs            22  –  38%

Protein         21  –  37%

Fat                 6   –  25%

Now the good news is, that even if you screw this recipe up and add too much milk, you haven’t screwed up. Just add a straw and BOOM you turn pudding into a blueberry protein shake! Not a mistake, just a “creative opportunity”. That’s honestly how I think about cooking in general, creative opportunities. It’s my way of defending my lack of culinary skills.

So there you have it, one delicious protein pudding that will satisfy your sweet tooth without derailing your weight loss. As a side note, I’ve made similar versions with mixed berries and PlantFusion chocolate protein powder (also delicious) and have plans for mango/vanilla over Summer. Really the fruit combinations are only as endless as your imagination. Enjoy!

      I actually often have it without the protein powder too. We don’t need as much protein as we think. Esp western diets.

    I have seen so many recipes using soft tofu, but have never tried it. I am not a huge fan of tofu to begin with, but maybe using it in a smoothie with the protein powder would change my mind.

    I grew up eating tofu and it’s one of my favourite food, but I have never thought to mix it with fruit. I think this is really a great idea! It’s not only giving more option of the flavor, but it’s also healthy.

      hahahah I eat all the carbs. 70% of my diet is carbs. Fruits are carbs. Every cell in your body runs on carbs.

    I love blueberry especially in smoothies and desserts! I think this recipe is worth trying out! It looks so good and filling, perfect for having before or after working out.

    Love the color that blueberries give shakes! I have more than that last 10 pounds to lose but I am not focusing on that at the moment. Just making small lasting changes. My biggest is drinking enough water!

    Congrats a D on losing 10 pounds that sounds great. This movie looks delicious I love the color, however I’m allergic to soy so I can’t add that to my mixture but I’m sure it’s just as delicious without it .
