As an official Meatless Monday blogger sometimes we get perks, one is that we sometimes get to try meatless products, test them, review them, try them out, and generally see what we think. Recently I got to try out two Dominex products. As I’m all about the blogging I figured I’d spill the results into a few different posts and share little by little, and honestly because I’m a photo taking and food eating fiend 😉
Dominex are known as the “eggplant people” and you might think “really? how many ways are there to use eggplant?” well Dominex just took that question and figured out it was actually a WHOLE LOT of different ways actually. Their most recognized product is undoubtedly the Eggplant Cutlets. Which is eggplant in an italian style breadcrumb.
While all off their products are vegetarian not all are vegan but they disclose on the box which products are vegan, as you can see above. Each box contains pieces of breaded eggplant making eggplant “parmesan” easy peasy! The box has 5 servings, and just 100 calories per serving. And obviously the slices are eggplant big, and could be used so many ways, maybe as a burger like the on the front of the box? But hey if I was doing that I’d buy the Dominex Angel Burgers, yes made from eggplants!
A box was just $3.99 at Sprouts Market, making them less than a dollar per serving! I decided that for my first Dominex adventure I’d make Vegan Eggplant Parmesan which is the recipe on the back of the box. Sometimes you don’t need to get all crazy!
Required: Eggplant Cutlets, pasta sauce, vegan mozzarella, vegan parmesan cheese
Directions: Pour some pasta sauce on the bottom of a baking dish. Place a layer of cutlets, sprinkle with some cheese, repeat. Cover and bake for 35 minutes at 375°. For a crispy top uncover for the last 5 minutes.
The photo doesn’t do it justice! It was DELICIOUS! I’m a BIG eggplant parmesan fan anyway and this was easier than my recipe. I liked that I didn’t have to do the breadcrumbing, or watch over anything. I’m a lazy cook, so this really appealed to me. Just prep, layer, put it in the oven and BAM. I may or may not have eaten 2 portions that night…. ok I did! It was too good, and went really well with a big green salad.
