If you know me personally you’ll know that I LOVE FOOD! My favourite things are health, fitness and food. Not always in that order, oh and throw dogs in there too! Especially puppies… aw dalmatian puppies. Ok Di pull it together, anyhow today I wanted to share my grocery shopping as always and also comment about 6-pack abs. Namely the nutrition required for 6-pack abs.
There. It’s no big secret. If you eat more fresh vegetables and fruit then you eat less processed shit. 1/2 your plate needs to be vegetables. No green bean casserole made with canned mushroom/chicken soup doesn’t count. Nor does it count if you’ve slathered it in 2″ of ranch dressing! I can always tell when my diet needs a tune up because I get puffy, my abs disappear and I know I need to get my food back on track. So what kinds of stuff do I eat? Well lately one of my favorites has been using veggies raw. I’ve been jonesing after a spiralizer after seeing all these fancy spiralized veggies on instagram and pinterest but I’m not sure what kind I want. Plus I have a mandolin (available on Amazon) for julienne veggies and a veggie peeler so I got creative 😉 I took a zucchini and my peeler and just peeled it. There is already spaghetti squash and zucchini noodles so I call this zucchini linguini, as linguini is the flatter pasta.
I decided to leave this raw, but you can cook it through for a couple of minutes if you want, I’ve done that too! To the raw zucchini linguini I added lettuce, mushrooms, cherry tomatoes and red pepper! I estimate the amounts, just throw it in a bowl. The calories for veggies are negligible but the nutrient density is out of this world!
I decided to enter the details into my jawboneUP24 iphone app and see the details so far… btw I freakin LOVE my JawboneUP24, definitely a great activity, sleep and food tracker!
Yup 75 calories so far! And 5g of protein! Yeah don’t let anyone tell you fruits and veggies have no protein! Then I added some vegan meatballs I’ve been trying out (review soon!) from Whole Foods, Trader Joes marinara (low salt, fat free… I’ll share details of the one I eat soon too!) and a light sprinkle of vegan cheese and VOILA: vegan deliciousness in under 15 minutes!
Total calories were around 325 because I had more meatballs than I should have, oops! The serving size is 4 balls rather than the 6 of my usual brand. Proof right there that you should ALWAYS read the label 😉
Anyway, try it! Works with other veggies too, especially the summer squashes. I love it, and it’s the main reason I always buy organic zucchini, not only does it taste better (especially this time of year) but it means I can eat the skins without fear of eating a shitload of chemicals. Eat clean, stay lean!

ahh, i’m so glad there is another vegan i’m fit possible ambassador! i love zucchini noodles, but i’ve never thought to add meatballs to them! i can’t wait for your review on them so i can decide whether i want to pick them up.
